The Stagionello® Fish Curing Device is a patented device with which you can process all types of fish, molluscs and crustaceans through defined-phase, short and medium fermentation, smoking and/or cooking processes. The Stagionello® Fish Curing Device is the only device on the market that meets all the requirements dictated by the scientific opinion of the E.F.S.A. (European Food Safety Authority) on the correct and safe production of dry-aged meat. Humidity, Temperature, Ventilation, aW and pH are all factors that the patented IoT4.0 technology (No. EP 2769276B1) continuously manages, ensuring the safety of your food. The Stagionello® Fish Curing Device is a 100% Made in Italy device, dedicated to the maturation of all types of fish and the creation of exclusive “Ready To Eat” cured or cooked seafood products. You will be able to safely create healthy, quality products, thanks to patented systems based on continuous pH monitoring and control. Processes all types of fish through maturation, smoking, drying (dry-aging), humidification, thermodynamic and cooking processes.

The Cuomo Method® applied to the Stagionello Fish Curing Device allows all types of fish products to be processed. The pH-managed process makes it possible to produce ‘ready to eat’ foods with intense aromas, decisive flavours and inimitable softness, guaranteeing the consumer an original gastronomic experience. The Sicur Food Control® is the technological translation of the Cuomo Method®: a patented device that controls, analyses and manages the storage and/or processing phases of food inside the climatic chamber through a simple and intuitive display. TECHNOLOGIES ALWAYS AT YOUR SIDE

Features of the Stagionello Fish Curing Device are the patented system that can check and govern the pH of food during all processing steps. This will always give you the possibility to shape safe, healthy and quality productions. Thanks to the Climate Cookbook, you can set a perfect microclimate for each type of food by starting everything with a few simple clicks. The humidification and cold-flavoured smoking system (Fumotic®), on the other hand, will enable you to manage the weight loss of your food. Thanks to the Cleaning in Place (C.I.P.) system, you can sanitise and dry the microclimate chamber automatically, without too much effort. The HACCP register will allow you to constantly record the parameters of your food, in compliance with current food safety regulations. You can view the data directly on the device’s display by downloading or printing it out at any time. IoT 4.0 Technology will allow you to always have a remote connection, and remote diagnostics, remote management and alarm reporting services for preventive action.
