The Stagionello® Meat Curing Device is a patented IoT 4.0 system for professional maturation, fermentation, flavored smoking, and cooking of meats with pH monitoring and management. The Stagionello® Meat Curing Device is the only system on the market capable of meeting all requirements set by the scientific opinion of the EFSA (European Food Safety Authority) on the correct and safe production of dry-aged meat. Humidity, Temperature, Ventilation, aW, and pH are all factors managed continuously by the patented IoT 4.0 technology N° EP 2769276B1, ensuring food safety. The Stagionello® Meat Curing Device is a 100% Made in Italy system, dedicated to producing “Ready To Eat” foods under your brand, such as exquisite dry-aged meats, innovative cured meats and beef hams, and flavorful cooked beef salami. With the Stagionello® Meat Curing Device, you can mature, dry, ferment, dry, smoke, cook, flavor, preserve, and manage weight loss.

CUOMO METHOD®

The Cuomo Method®, applied to the Stagionello Meat Curing Device, allows the transformation of all types of meat. From beef, to deer meat, horse meat, as well as sheep and game meat. The device transforms and extends preservation up to twelve months, with continuous cycles (loins, shoulders, quarters, and legs); multiple defined phases (Bresaola, beef hams, pastrami, meat snacks); or cooking cycles (beef wurst, beef bologna). The pH-managed process enables the production of “ready to eat” foods with intense aromas, bold flavors, and unmatched tenderness, ensuring consumers an original gastronomic experience.
The Sicur Food Control® is the technological translation of the Cuomo Method®: a patented device that controls, analyzes, and manages food preservation and/or transformation phases inside the climatic chamber through a simple and intuitive display.

TECHNOLOGY ALWAYS BY YOUR SIDE

Features of the Stagionello Meat Curing Device include the patented system for checking and controlling the pH of foods during all transformation phases. This will always give you the opportunity to shape safe, healthy, and quality productions. Thanks to the Climatic Recipe Book, you can set a perfect microclimate for each type of food and start everything with just a few simple clicks. The cold smoking and humidification system (Fumotic®) will allow you to manage the weight loss of your foods. With the Cleaning in Place (C.I.P.) washing system, you can automatically sanitize and dry the microclimatic chamber without much effort. The HACCP Register will allow you to constantly record the parameters of your foods, in compliance with current food safety regulations. You can view the data directly on the device display by downloading or printing them at any time. The IoT 4.0 Technology will enable you to have remote connectivity at all times, with telediagnosis, remote management, and alarm notification services for preventive actions.
